Hey Simple && Sweeties,
So, y’all know I’m a vegan now. I’ll do a post later on letting you know all about that life choice. But, let me be real with you, vegan cheese is a unicorn.
There is no such thing, and anything claiming to be vegan cheese is just a donkey with a d*** on its forehead. It is the biggest let down of my life.
It was only natural that my Mexican self find a loophole to keep the spirit of quesadillas alive in my home. Quesadillas are/were my favorite go-to quick breakfast. Just throw some cheese in a tortilla, zap it in the micro && done!
Buuuuuut now, (you are welcome my fellow vegans) I found something that satisfies my fatty morning/snack craving with the same ease. Avocado-dillas!
It is a twist on cajun avocado toast but more fun to say.
Here we go, let’s break it down now:
Cajun Spices or Cayenne
Mash 1/4th of the avocado onto each tortilla.
Add your spices!!!
Microwave for 30 seconds.
Stand back and bask in your culinary prowess!!!
