Hey Simple && Sweeties!

How are y’all doing with your resolutions so far? I’m doing the exercise thing 2-4x a week, but I’m not satisfied.

What good is having a nice car if you fill the tank with cheap gas? Yeah, I’m talking about the diet.

I promise to not go total health freak on you, but I really admire the paleo lifestyle.

I’m an anthropology minor and I’ve learned that after the agricultural revolution, our health as a species declined.

Eliminating grains might have some positive effects as well as eliminating dairy. What other animal continues to nurse past infancy? You can”t tell me that humans evolved to be cow parasites.

So, my point, I’m going paleo-ish. I can’t promise that I’ll never enjoy a taco again, but I’m going to limit them.

There will be a future post on how to make the switch to paleo (I need to figure it out for myself first ha).

If you’re on the fence about trying a paleo meal, try this one! It’s one of my favorite clean eating, mess less recipes!

 

This recipe is quick, mess-less, and sooo low calorie! && if you are into meal prepping, you can make several packets and freeze them. In the morning or night before, move the frozen packets into the fridge so that it thaws when you’re at work or school. Voila, dinner is prepped!

Simple, Sinless && Messless Baked Salmon

Prep time 20min

Cook time 23min

Calories per serving: 290-320

Preheat oven to 400 degrees Fahrenheit

Ingredients

4oz Salmon

Asparagus spears

Cherub tomatoes

Lemons

Salt

Pepper

Heavy Machinery

Foil*…yeah, that’s it.

So let’s get going!

She’s in charge of slicing the tomatoes. She’s a pro.

First, make sure you cut these tough bits off of the asparagus. They lack flavor and are harder than heck to chew.

Next, lay your asparagus, tomatoes and salmon in the middle of a large square of foil. Cut your lemon and sprinkle the top of it all with the juice. Salt and pepper to taste.

Fold the North and South ends of the foil over each other.

Then, roll the East and West ends up towards the center. Make sure that you do roll upwards, or you’ll have a mess on your hands!

Lay your salmon packet in the oven and let bake for 20 mins. just because it was Alexa and my first time with this method, we baked it for an additional 5 mins and it was still fantastic, so it’s up to you. Just don’t cook it for less than 20 mins…it’s fish, don’t get reckless ha!
