This recipe for Salmon Blue-Cheese Pasta is a creamy and healthy meal that can go from skillet to table in under 30 mins. It’s that easy!

 

Ingredients

(per person)

365 calories, 55g protein

4oz Salmon

3oz Shrimp

1oz Angel Hair Pasta

1/2 Cup Broccoli

1 Tbsp Crumbled Blue Cheese

1 Lemon

Lemon Pepper


Step 1

Set your burner on medium. Spray a generous amount of coconut oil cooking spray, or any other oil you prefer. Drizzle lemon juice and lemon pepper over the salmon and shrimp.

Step 2

While the salmon and shrimp are cooking, simmer the angel hair with the broccoli. For a more nutrient packed dish, steam the broccoli instead of boiling it. This way is just quicker and easier. The angel hair should be soft after 2.5 mins once fully submerged in boiling water.

Step 3

Once the pasta is soft and the broccoli is tender, strain it and set the burner on low. Add the blue cheese quickly and cover with the lid to capture the heat. This will melt the cheese and create a creamy sauce.

Step 4

Gently stir to fully coat the pasta and cheese mixture evenly. Once this is ready, portion the angel hair into serving sizes.

Top with the salmon and shrimp. Et Voila, dinner is served!
